Thomas Rhodes Banana Bread Recipe

At some point over the last few weeks we have all turned our hand to a spot of baking. We asked our Executive Head Chef Thomas Rhodes for one of his favourite recipes to share, which is this rather delicious vegan banana bread.


3x Very ripe bananas
75g Vegetable oil
45g Maple syrup
225g Plain flour
15g Baking powder
3g Cinnamon
50g Raisin

Equipment needed

1x Mixing bowl
1x Rubber spatula
1x 1kg loaf tin
1x Whisk


Pre-heat the oven to 180oC
Mash the bananas into a puree (using a whisk makes it easier)
Combine the oil and maple with the puree
Combine the flour, baking powder and cinnamon in a bowl
Sieve the flour mix into the banana mix
Beat all together using the spatula
Lightly rub oil in the loaf tin
Once fully combined, use the spatula to decant the mix into the loaf tin
Flatten the loaf, making sure its spread evenly
Leave for 5 mins to relax
Place in oven for 25 minutes
Open the oven door, take a look at the loaf and allow some steam out the oven
Bake for a further 12 minutes
Remove from oven
Cool for 10 minutes in loaf tin
Remove from tin and place on a wire rack
Allow to cool
Slice and serve with a brew
