Guinness Cake recipe

Our Executive Head Chef, Thomas Rhodes, shares a Guinness Cake recipe for St Patrick's Day.

Makes 6 small cakes

100g Guinness
100g butter
25g cocoa powder
100g plain flour
150g caster sugar
1 medium egg
50g sour cream
1g Salt
4g bicarbonate of soda
8g vanilla essence

1. Place Guinness and Butter in a pan on a medium heat, stir until butter has melted (do not boil)
2. Sift in cooca powder, flour, bi carb, salt and sugar together
3. Whisk Sour cream, eggs and vanilla together
4. Add egg mix to the Guinness
5. Fold the dry mix into the Guinness mix
6. Pipe into muffin/cake paper moulds
7. Bake at 170C for 15 mins
